Soy Sauce
The soy sauce used in our restaurant is made in Kumamoto prefecture used from natural materials. The recipe has passed down generations and has been unchanged since before the Meiji Restoration.
Dashi
Our Dashi is delicate with a firm taste made using Bonito sourced in Kagoshima as well as high-quality Kombu kelp from Hokkaido. High-quality intestine made from specially selected domestic beef with a taste not found anywhere else. Currently there are many Nabe restaurants that use inexpensive and easy-to-obtain mixed products, here at Koganeya we use only the freshest and highest-quality cattle in our restaurants.
